Brifisol® 414 – a sodium phosphate blend with a carefully balanced pH, ideal for the production of emulsified meat products. A high diphosphate content allows for rapid effectiveness and improved meat water binding capacity. Brifisol® 414 can be used in dry or slurry form in all meat emulsions. Curing reaction speed can be improved due to the blend’s neutral pH.
Brifisol® 512 – an agglomerated blend of polyphosphates designed to remain completely soluble, even at very low processing temperatures and in the presence of salt. Brifisol® 512 has been shown to be very effective when applied by injection, tumbling, or marinating into any muscle meat. The special agglomeration process will prevent Brifisol® 512 from caking when added directly to standing water.
Brifisol® 750 – a blend of potassium and sodium polyphosphates, ideal for the production of reduced sodium meat and seafood products with superior yields. It is specifically designed to remain completely water soluble and effective even at very low processing temperatures and in the presence of salt. Brifisol® 750 may be applied by injection, marinating, or tumbling.
